2 x Coles Lamb leg steak 2 packs
2 cups (240g) frozen peas
2 green zucchinis, sliced into thin rounds
1 x 200g tub Coles hummus
200g cherry tomatoes, quartered
Step 1. Heat and spray a non-stick frying pan with spray oil over a medium heat. Season the lamb steaks. Cook for 2-3 minutes each side, or until cooked to your liking. Remove from the heat and allow to rest for 3 minutes in a warm area before slicing into 2cm strips.
Step 2. Meanwhile bring a pot water up to the boil and add in the peas. Cook for 2 minutes before adding in the zucchini. Cook for a further 1-2 minutes, then drain.
Step 3. Place the hummus onto the base of serving plates and top with the lamb. Toss the tomato through the zucchini and peas and place onto the plates. Season
